pumpkin recipes

Now that there are so many blown up pumpkins lying around, instead of
composting ALL of them, what recipes of the unusual type have any of you come
up with?  Duncan, your pickle recipes sound good.  Do you make pumpkin butter
or pumpkin jam?  I would like to see a few easy recipes for pumpkin, nature's
truest and finest vine fruit!
