Mounding Soil & Compost Acidity Adjustment

Growers,
I have two questions today that I've thought about
seems like a lot these last few days:

1. Why do (especially you growers in the north)
mound up the soil where the pumpkin is planted?
Is this to distribute the solar heat to the root system?

2. Here in the south where I live we do not have an
abundance of maple trees to use the leaves in making
a compost heap. Can other leaves, say oak be used
and if so, can you adjust the acidity of the composted
leaves and the compost heap in general? With what?
Lime maybe?

Still thinking about next year.
