Dennis,
    The cover crop I know of is a combination of vetch, pea and wheat seeds 
that are
planted in November or so.  Most folks around here plant it in between their 
vines and allow it to grow about 2 feet or until they have to get in the 
rows. Then they disc it under
for the nutrient content of the plants. We didn't plant any this year, but we 
did last year.
