They are good to eat. Skin and remove glands on legs, make it empty
inside, wash with fresh water, if you want; soak for a half hour in a
weak salt and vinegar, soak the ground hog that is. Cut into serving
size pieces, dredge in flour seasoned as you will. Flash fry until
golden brown. Set pieces aside as they are browned. 
   Cut up some 'taters,carrots, celery, one nice size onion, use what
every herbs and spices to your own taste. If you don't have any chicken
stock use a few Herb-Ox cubes. Place all the vegetables in the bottom of
a dutch oven or large frying pan. Place browned meat on top of veggies,
add enough chicken stock or water to just cover the vegetables.
   Cover bring to boil on top of stove. Set oven to about 350 or so.
Once everything is boiling place in oven, cook about 90 minutes or until
tender.  Oh yeah keep a bit of the flour and grease in the bottom of the
pan add about 2 tablespoons more flour. Do this before you put
everything in the dutch oven or pan. This will make a nice gravy.
   Sit back relax and eat. In most cases I don't kill something unless I
plan to eat it. Fella tried to get me to eat skunk once. I hear it is
good but just couldn't bring myself to try it.
