About 3 days give or take. Two days before you will see some yellow in the
flower. The night before, it is very orange/yellow. You will know when you
see it. Make sure to cover the flower (I use a bucket) so the bees dont
cross-pollinate for you. If you cover it a day early, there is no harm, but
if you are late, you wont be able to use the seeds next season with any
certainty.

Also, remember to bring 3-4 males inside that are ready to open in the
morning too, so the bees dont steal all of the pollen. I usually pollinate
around 8:30 in the morning.
