newbie questions

I live in Central Ontario (Millbrook) and I am growing three AG plants
from packaged seeds. This is my first attempt and I have a few
questions.
1. The package just says: Atlantic Giants from Howard Dill; I bought
them from the local hardware store. Are all the seeds being discussed
here from this same group? Next year, should I get seeds from a
different source?
2. The vines are all 3' - 4' in length and some leaves are about 16"
across. I have buried the first foot and a half. I have had a number
of male flowers but not male ones yet. What type of fertilizer should I
be using now? Which of the three numbers (I always forget what they
represent) should be the highest? At any point should I switch
fertilizers?
3. How often and how much should I water?
4. Could you describe some of the insects I should be looking out for?
