You have to choose them based on overall growth rate, and to a lesser extent,
shape, angle, any defective spots, etc.
As for how fast to cull, not too fast. There is some evidence that culling
too much at once can be a factor in other pumpkins on the vine getting a
surge of water at once, and splitting.
