Pumpkin vs Squash

How do I tell if a pollinated fruit is going to be a pumpkin or a squash?
I've got several AG plants, some of which are putting out yellow fruit and
some are starting off a medium green. The green ones are on the largest
plants and have the largest stems, but seem to grow the slowest. The yellow
ones are growing like crazy.
