Hi Cary,
There are several reasons to direct the vines. One is to make good use of
the space allowed per plant. Another is so that you can get to the inside of
the plant as it grows so you can spray for insects and disease.  Some
growers will double plant, starting 2 plants a few feet from each other and
grow them in opposite directions, thats why you have to direct them. Its
easy to do. You can use sticks or plastic clothes hangers cut into U shapes
work great. I borrowed those ideas from Don Langevins books, How to Grow
World Class Giant Pumpkins.
  Don't try to move them all at once or they will snap, move them a few
inches a day when it is warmest. Don't try to pull them to the ground
either, let them come down naturally. Hope this helps!
