calcium nitrate and vine training

hello all,
 
I am a new grower who needs advice on two accounts.  First, I bought a 50 # bag of soluable grade calcium nitrate, but don't know how to mix/apply it--frequency etc. any suggestions?
 
Second, I have four plants growing back to back that look like they will want to run soon, but what if they run in the wrong direction?  what is the best way to train the vines to run away from eachother?
 
Any advice would be very appreciated.
