Peas and Q's
Long Island Glenn, Sir,
We have pie and soda here in California, sunshine and soft soil,
potatoes and peas. Our longest island is Catalina, but we have many
other fine qualities. We don't have anyone like you. Come on out!
For those of you who need a pumpkin fix to get you through 'til planting
season, try this recipe from Deb Sundstrom. We had it for tonight's
dinner. Wowee!
Pumpkin Blueberry Muffins
1-2/3 cup flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice
Mix. Combine 1 cup pumpkin and 1/4 c evap milk mix until blended.
Cream 1/3 cup shortning and 1 cup brown sugar in a large bowl.
Add 1 egg; beat until fluffy, then add about 1/3 of flour mix followed
by 1/3 of the pumpkin mix until all is added in. Stir in 1 cup
blueberries and 1 tbsp more flour. Bake at 350 for about 40 min.
Makes about 18 muffins.
