The slime coating on the seed serves the same purpose as the slime coat on
a fish. Its waterproofing. Most seeds have it.

Good question. I've also wondered if that coating had any thing to do with
self inoculating the seed against fungus or anything else when it's planted
the following year. I don't know if there is a scientific name for it,
maybe
someone out there can answer that. When It dries, I just call it "skin" and
remove it by taking a fan out in the yard and rubbing a handful of seeds
together at a time and letting them fall a few inches onto a window screen.
The dry skin blows right away.
