What is the consensus (is there ever one?) as to when to take the cloches
down? Should I be looking at plant size or overnight temperatures? Are there
other considerations?

Do you typically just remove them or do you wean the pumpkins from them?
Going from a cozy cloche to the cold, cruel world in one swell foop could be
rather shocking, I would think.

Any tidbits you can toss, I'd be grateful.

I leave them up until the plant is rugged enough to with stand storms and I have the vine secured to the ground.  They also give warmth but this year the frost danger has past but the plants are not big enough to remove them yet.   I will be updating my Web Site in a few days with pictures.
