Black strap molasses comes from the final refining process of molasses, also known as the third boil, it is more concentrated.
the 3 types of molasses are
unsulphured, the finest quality made of the juice of sun ripened sugar cane.
suphured, made from unripened or green sugar cane treated with sulphur fumes during the sugar extracting process, it is darker than the first boil and has a less sweet flavor.
black strap, this is the result of the final or third boil, very dark has very little sugar but is high in nutrients.
