Never heard of candied pumpkin, but can say that when things are candied,
particularly citrus rinds, it means they are cooked in a sugar syrup and then
removed when tender and drained, then rolled in granulated sugar and dried at
room temp.
How one would do this with pumpkin is the trick. Seems the pumpkin flesh is
too tender for this type of handling. Perhaps the pumpkin is cut into strips
and dehydrated prior to cooking in syrup and coating with sugar.
If anyone knows, please post.
