Pumpkin Dip
2 (8 oz.) packages cream cheese, softened
1 cup solid-pack canned pumpkin
1 cup powdered sugar
1 cup packed brown sugar
3 teaspoons pumpkin pie spice
Gingersnap cookies
Yields about 6 cups
In a large bowl, beat cream cheese and pumpkin until smooth. Add sugars and
pumpkin pie spice; beat until thoroughly incorporated.
Clean and hallow out a small pumpkin. Pour prepared dip into cleaned
pumpkin. Place on serving platter and surround with gingersnaps. Serve
immediately.
