Pumpkin Cake worthy of a Stelts
Pumpkin Cake
Heat oven to 350 degrees.
Assemble ingredients: 1 cup cooking oil; 3 cups sugar; 4 eggs; 1-1/2
teaspoon salt; 3/4 cup water; 2 teaspoons each cinnamon, nutmeg, pumpkin
pie spice and ginger; 1 small can pumpkin (or the equivalent in baked or
steamed fresh pumpkin); 3-1/3 cups flour; 2 teaspoons baking soda.
If your blender is tough enough*, throw in the oil, eggs, sugar, salt,
water, spices and pumpkin, and blend well. Transfer into large bowl and
add flour and baking soda; mix well with electric mixer.
Pour into one greased tube pan or bundt pan or into three regular loaf
pans.
Bake for one hour, until toothpick comes clean.
* If your blender fails you, you can do this with the electric mixer at
slow speed. Trouble is, it's pretty goopy.
