RE: SEEDS
Don't know if this will help but I dried Bulgarian Carrot Chile
(Orange!)seeds a few years ago in a food dehydrator; I was worried that
I may have "cooked" them. This year, I tried growing them and about 18
of 20 germinated successfully. The seeds looked perfectly clean, nearly
the same color as they came out of the peppers. I bring up this point
because last week I tried drying Ancho pepper seeds (not the same but
still a hot pepper with nearly whitish seeds), air-dried in paper
towels, and they curled up & had dark, almost black edges, etc, nowhere
near what they looked like when they were removed from the fruit. Maybe
the trick with using a dehydrator with pumpkin seeds (or any other seed
for that matter,) is to insure the seed is cleaned, then dehydrate while
checking periodically, maybe every 1/2 hour to hour so they aren't
overdone. DON'T put them in the dehydrator at night & check them in the
morning! Keep an eye on them.
