I grew them a couple of years ago. They should be left on the vine to
completely dry (sometime after the first heavy frost). When they are ready
you will be able to hear the seeds rattling around when you shake them.
After that just pick and peel. I always ran mine through the washing
machine once before using them. If it has been picked and is still green I
would guess it will probably rot....that's what happened to me.
