To preserve the cut surface and retard spoilage of a carved pumpkin, get a can of spray from your local florist or floral wholesaler called: Super Surface Sealer. It is made for the floral industry and is used on cut fruit, flowers, etc. to stop evaporation (and spoilage) of fresh things used in flower arranging. It works pretty well and will buy you some major time. I think it is made by "Design Master". I worked as a floral designer for years and it was a staple in the industry. Costs 3-4 bucks a can and you will only need probably one can for a huge pumpkin.
