I believe the same thing. I have had many pumpkins that have stopped adding inches and one of the things I have always done is slap the pumpkins (I think they like it rough) anyways you can tell the thickness as you lightly slap them open handed. I can almost tell for sure they are picking up wall thickness or density because of the diffences you hear in sound. Try it and let me know.
You want to hear a major difference go to your weigh off sight and pick a green squash and a pretty orange pumpkin that is the same size. I will be you almost in every case the squash sounds like you are thumping on a piece of wood while the pumpkin has much more of a hallow sound.

PS, I do know that a pumpkin that is picked can loose as much as 10 pounds in a day.
