I have not done any pumpkin boating but I did watch a video. If I'm not mistaken you need at least a 700lbs pumpkin to begin with. For mounting the motor all you should have to do is put a piece of plywood on either side of the shell to give a sturdy base for the motor to mount on. I think your biggest problem would be the stability of the beast! I imagine again you should have the heaviest part down in the water or a little to the front so that when you mount the motor the two balance out.
