Grated Pumpkin flesh      5lbs.
Sugar                     3½ lbs.
Citric Acid               ½ oz.
Water                     1 gal.
A good White Wine Yeast   1 pkt.
Nutrient                  1 tsp.

Method
Place the main ingredients and the sugar into a plastic container. Pour
boiling water over and stir. Allow to cool to 80°F or 22°C and then add
Yeast. When the must is fermenting, cover the plastic container with a
cloth, stirring the must daily for 6 days. Strain/syphon off into a glass
jar/bottle and fit an air lock. After one month carefully syphon into
another glass bottle, taking care not to stir up the bottom of the first
bottle, attach air lock and leave in cool place at 65°F for the next 2
months. Then bottle and cork, keeping bottles on their side, (in order to
keep the corks wet thereby preventing oxygen from entering the wine) for the
next 6 months. Then open a bottle and try your wine. Enjoy! Cheers Keith
