Karen,
This plant will come back from roots left in the soil. I've dug some of
mine several times from the same spot...always comes back. So the answer
to your question is 'yes'. If you have the roots out of the ground and
can't remember which way is up, then lay them horizontally in flats and
they will sprout from the right place. Then, when they've sprouted and
sent out feeder roots, you can unearth them and pot them up in the right
direction.
I'd use either coarse sand or a sand/peat mix or bagged potting soil
....actually they grow pretty well in pure sand :-) Something loose so
when you unearth them they come out easily without tearing the new roots.
May take a month or more for them to do much...don't let them dry out once
in the flats, but they don't want to be soggy, either.
