Basically , we are just talking making a topiary with any coleus plant.
They do make nice topiaries (also called standards) . 
You take a nice straight rooted cutting and place a small support next
to it. Keep turning it to make sure it grows straight or else give it
direct overhead light. As it grows up. trim the side shoots off the main
stem to encourage the top growth. When it gets to be tall enough for you
(normally around 12-16 inches), you pinch the top growth back and let
the top branches begin to fill out. BTW, continue to tie the trunk to
the support as it grows. Eventually, the main trunk will become woody
and beable to support the plant. 
As the top side growth expands, just shape it to the desired shape. Be
careful not to let the top side growth get more than 2-4 inches out from
the trunk or else it will become too top heavy. As you nip the bud on
each branch , new side growth on that branch will develop .
