Hello.
You may want to loosen the soil carefully before you start pulling up
roots-- forking gently with a potato fork and only gently pulling back a
little-- to help keep the roots in one peice.
Actually mint roots aren't bad, they tend to be, and stay, connected as
they're pulled, and they're normally large-- at least the peices you'd
want to worry about-- light colored, making them easy to spot.
Meanwhile, thought I'd mention I added Vietnamese Coriander (Polygonum
sp.) to my list of plants that root well in water.
