The seeds on Cosmos make up the little spikey ray-like arrangement after
the petals fall off. Let them dry on the plant, but not so long that they
fall off if you want to collect them. Although, I always let lots of mine
fall off so I don't have to replant in that area.
Check a Zone Map to locate your zone, it really helps to know it.
