Potting Soil

I've been using coir, also known an coco fiber. I mix it with vermiculite
for seed starting. For potting up, I do add soil to my mix, but you don't
have to. Just make sure you fertilize adequately.

How about burying them so the roots don't freeze?

The sedums won't freeze, but the roots might if they're in small pots.
Again, bury the pot to keep the roots from freezing. In Zone 8, that should
be enough.
