I thought Foster's Holly was not hardy here. I am a little bit colder than
you, zone 5/6. What is its max. size? If it can be kept fairly short, I'd
love to try one.

I'll plant a male if it turns out I need one, but supposedly any male
holly blooming at the right time (even 2 miles away) will pollinate any
female evergreen or deciduous, native or exotic makes no difference. I
have found this to be true so far.
