Hi,
I have also seen this kind of damage (hostas on ground with hole dug next to
it) with chipmunks and racoons. They both seem to do this just for the fun of
it. May take a nibble, but not eat the whole root. In the winter if you
have voles you will see the most damage. I have never had them take the plant
out of the ground. They eat the feeder roots and leave the center (so your root
looks like a white radish) and often the plant flops out because there is
nothing anchoring it. Vole damage is really evident. Hope this helps.
