Hi Barbara, when I make a wide cross, I take all the petals and stamens off when the flower is in the "bulgy" stage (that's Marjorie Brummitt's word),.  That is, just before the flower begins to open. I open the flower by hand, removing the falls, standards and stamens as I go.  This is a delicate process, since I don't want to break or damage the stylearms.  Contrary to anything you might have read in the past, siberians do not self pollinate in bud. 

Good luck with your crosses.  If you do get more seeds than you need, you could always send them to a seed exchange, like the Species Iris Group of North America or British Iris Society.  Marty Schafer, Carlisle, MA
