I collect the anthers after the pollen sacks have opened and place them between two coffee filters in the refrigerator and allow them to dry for 24 to 36 hours.

I use the smallest available hypodermic needle to handle the anthers. They are dehydrated to the point it takes a moderate amount of pressure for the needle to "spear" the anthers.

I measured the moisture content of daylily anthers so treated once but have never tested iris anthers. The daylily anthers had less than 5% moisture remaining.
