You are doing something different from the commercial growers (please don't
use the term "farmer" for these mostly very large corporations), you are
probably letting them ripen on the vibe while they pick theirs at a first
break stage of color and them have them gassed to turn red during shipping
and storage.

Remember that there are a lot of varieties of many different vegetables with
great flavor and taste that will never be seen in the grocery store because
they don't meet the needs of the large commercial growers-ripen all at once,
be suitable for a machine harvest and processing,  be able to sustain the
rigors of shipping and storage, and perhaps look and taste somewhat like the
real thing.  Don't forget that the round red things in the grocery stores in
Jabuary are not hockey pucks!

As a Market Gardener (we sell at the local Farmer's Market), we still pick
ours when they are ripe.  The downside, of course, is that if they don't
sell, we only have a few options-donate, eat or preserve, or feed the
chickens (they are in charge of the compost pile).   They won't last until
the next market day.  This also means that the day before market day is one
very long day.
