Larry,
When your onions begin to yellow (the leaves that is), it's a sign that the
leaves are sending their energy to the roots and the roots are about to
mature. Stop watering at that time. Some stalks might even fall over, let
them.
Usually, you want the onions to cure in the ground, nice and dry, for about
2 weeks before harvesting.

When do I know to harvest my onions and aren't I supposed to refrain from
