Winter Squash

I have two kinds, butternut and spaghetti. What I want to know is how do
you know when they are ripe and how many fruits do you usually get per vine?
Right now mine are trained to the fence around my garden and between them
have almost completely covered said fence. The butternut (which is suppose
to be an early variety) has only two squash on it so far, on of them is
about 10 inches long and the other about 6. The color is just a little less
"vibrant" than the ones in the grocery store. The spaghetti squash has only
one squash on it which is about the size of a Nerf football and is still
pretty much a creamy green color.
