Re: Fuchsia jam


Just talked to Ida Drapkin, the Fuchsia Lady, and she gave me this recipe-  2 Cups fuchsia berries, 1 cup sugar, 2 T surejel.  Wash berries, cover with water or apple juice - boil until berries can be mashed.  Mash,strain thru cheese cloth covered strainer.  Bring juice to boil, add 1 cup sugar plus 2 T surejel.  To increase the recipe, add 1/2 C apple juice plus the juice from one lemon to each cup fuchsia berries.  Proceed as above.  Most of the fuchsia berries grown in So. Cal. probably have about the same taste - some that are grown in other places such as the splendens varieties (which have a longer berry) will taste a little different.
