Re: Eggplant Harvesting

This has been a bumper-crop eggplant year in my garden, so I feel qualified
to give advice. I harvest eggplant before it gets too ripe. If the skin is
dull and the fruit feels soft when prodded, it is probably over-ripe, which
means larger seeds and more waste. The fruits are still good to eat, but
not as good as they'd been if harvested earlier. This year I have four
different kinds of eggplant, and even though I live in Zone 3, I've been
picking eggplants since July. I usually harvest Japanese types when about
6-8 inches long, and others when they are roughly 5 inches in diameter. It
comes down to a matter of personal preference, but I'd guess your eggplants
are ready to pick right now.
