I use the paper towel method to check how good the germination is for old
seed, rather than planting all of them in pots and waiting, not knowing what
to expect. The paper towel method is also excellent for seeds that are slow
to sprout like asparagus or artichoke. Once the white root begins to show on
the seed, I plop them into a pot and all of them come through in about 2-3
days versus up to 3 weeks without pre-sprouting them.

Also, if you're planting outside in cold soil (peas for example), you'll get
a much better germination rate if you pre-sprout the seeds. The seedlings
are less vulnerable to soil pests if they've gotten a jump sprout.
