The leaves of coriander are commonly known as cilantro. It makes it a bit
confusing - coriander and cilantro being the same plant.
If you want to harvest the leaves, cilantro really prefers cooler
conditions. As you've seen, as soon as temperatures go much above 80, the
plant goes to seed, and the leaves change shape as well as taste. I stop
seeding cilantro until late August so that the heat passes and the plant can
grow in cooler weather.
Otherwise, here are a few tricks - seed short rows and seed them a week
apart instead of all at once. Pick the leaves heavily, as soon as you see 3
or 4 leaves on the plant, start picking. It does delay bolting a bit.
Also, try growing cilantro in the shade of other plants like tomatoes.
