Some of my favorite ways to use zucchini includes making zucchini lasagne and
stuffed zucchini.  In the lasagne, the squash are cut the long way into
slices and substituted for the lasagne noodles in the casserole. This recipe
will freeze well. Stuffed zucchini is a great way to use the very large
zucchini.  Many cookbooks have specific recipes for these dishes.  If you
want a recipe and can't find it, I could share one.

The squash vine borers got my squash again this year, so enjoy your squash
while you have it.
