Duncan,
Different foods require different methods. Acidic foods can be
processed with only a boiling bath canning method. Less acidic foods
and meats must be pressure canned. The pressure combined with heat
insures the best method of killing bacteria and preventing spoilage.
To be safe, I use pressure canning on all my edibles - acidic or not.
