Hi-I had a cold frame years ago.  Plastic was used.  The only problem I had
was the plastic was it was
not stretched tight enough.  So, over time it did sag.  You may be able to
use a sturdy plastic and
reinforce it down the center someway.

Actual greenhouses do use plastic to cover their houses.  The plastic is
tightly draped across the
framing and secured.  This is just a heavier plastic than what you would
normally buy.  I'm not sure on
the strength, but can find out.  So, this would work just as well with a
cold frame.  Does yours have a latch
on it so you can raise it a little and not open it all the way?  For
circulation.  Mine did, and I would prop
it open in the morning if it was too cold for my plants.  I used it in the
spring for spring/summer plants.
