CAuliflower question


I planted several cauliflower plants I bought this spring.  I noticed that
they had already started to form the "head when they were still in the cell
pack.  They have been in the garden for about a month now.  There has been
very little plant growth and the head in the center just seems to fanning
out.  Like when my broccoli heads went to seed.  Thay were no longer
compact. Two of the plants did not have the head started and the leaves on
these plants have grown about 3 times in size with no head development yet.
Either that or someone switched the plants on me and they are really cabbage
or something.  I did not think I could cut the head off and have it regrow.
Are there plants doomed because they were in the cell pack too long.  When
should I do?  Rip them out and plant something else?  I had to waste the
space on these things if they are not going to produce.
