Re: Bolting celery

In introduction, I'm Bobbi, publisher of Barbara's Natural Gardening
Newsletter. I've been reading some of your mail and the bolting celery
message was irresistible, must answer.

What I do when the celery bolts, is to chop the stalk and leaves up and
dehydrate them. When thoroughly dry, toss in the blender or food processor
and process into powder. Use to season soups, salads, stews, etc. It has a
short shelf life so store in an airtight container and keep cool. (Those
seasoning jars from chili powder work well, especially those with the
"sprinkler top."

Plant celery so it will mature in cool weather. Now would be a good time to
start seeds for those in climates with 180 days or more. Short season
gardeners must start seeds earlier to get plants to mature before deep
freezes.
