Break off the long white shoots at the base. It won't hurt them.
Leave the potatoes in a cool spot in the light (not bright sunlight) like a
north facing window ledge and they will resprout quite soon.
You want firm green sprouts about half to one inch long. Only one or two
per tuber.
It's really only important for New Potatoes as it helps them get away to a
quick start.
Main crops can be put in whether they have sprouted or not.
Though it is a good idea to wait until they have sprouted a little bit so
you can see if they are any good.
Saves planting duds.
