Re: TANSY

Sarah,

From Rodale's Encyclopedia of Herbs - "Stay clear of traditional cures involving
this potent herb. Tansy is still used sparingly in salads and in cooking, but
larger, medicinally effective amounts can cause violent reactions and death."

"...the danger comes from thujone, a relatively toxic substance also found in
wormwood."

"...the signs of poisoning include a fast, weak pulse, spasm, and foaming at the
mouth."

As far as children and gardens, there are sooooo many plants that are toxic it
would be very difficult to landscape a yard, let alone plant a garden without
including something that was toxic. I was amazed when I started looking at
lists of plants that were a potential danger, as I obtained a puppy earlier this
spring and wanted to know what to avoid. It is best just to work on teaching
children that if they put anything in their mouth not given to them by you, it
could make them sick (easier said than done?)

Oh, and if you still wish to eat it, "Chef tips" were:
1T of minced fresh tansy in a marinade for 1 pound of beef
Toss a bit of minced fresh tansy into a green salad and dress with lemon
vinaigrette
Add minced tansy to egg sald and serve on crisp rye toast
When mulling ciders and wines, add a few fresh tansy leaves. Remove before
serving.
