A cool, humid environment works best. I store mine in an old freezer in
an unheated shed. (Note that our winter temps rarely stay below
freezing for more than two days at a time -- you cannot let them freeze
or they will spoil.)
I just had what will probably be the last of last year's crop for dinner
this evening. Still just as good as when I lifted them in August. I
harvested 160lbs last year...
