Hello all Veggie-List Members,
I have reverted to becoming a lurker once again, especially since our
first frost is due any day in Southern Indiana. There is not much left
in my garden to talk about.
I have been harvesting Persimmons from a neighbors yard, and wondered
if any one can tell me an easier way to process them ? I wash the
fruit, run thru the colinder, to get the pulp, unfortunely each fruit
has from 1 to 8 seeds , which makes it hard to process. I have tried
removing the seeds before, but that is time consuming, and messy. I
then freeze the pulp in 2 cup containers. I will continue to process
the Persimmons, Persimmon Pudding is a family favorite, especially
during the Holidays.
Recipe:
2 cups persimmon pulp
1 t. soda
2 cups flour
2 cups sugar
2 cups milk
3 lg. eggs
Mix all ingredients well. Pour into greased and floured 9x13 inch pan.
Bake at 350 degrees F. for 40-45 min. Serve warm or cold with whipped
topping.
