Re: off-beet crops


Amaranth tastes very good as a pot green.  Sort of like A cross btween
spinach and mustard to me.  The plants themselves are attractive and
sometimes it's very difficult to make the first cut.  They love heat,
and tolerate dry once established.  They  grow quickly and sometimes we
start cutting 30 days after planting.  they can produce leaves all
summer if you are prudent in your cutting.  If you let a few go to seed,
you may never have to plant them again.  Raised beds highly recommended
if you choose this option.
