Wanting winter interest plants


Here in zone 5b USDA (Urbana, Illinois) we've still got some color left on
the trees.  Across the street from my window here at work a burning bush
is still glowing bright red, but the amelanchier 5 feet out doesn't
have any more leaves left on it.

I know that in another month things are going to be depressing as most
of the color leaves the landscape.

Does anyone have preferred tree or shrub selections for winter interest?
Even something as subtle as the dried flower panicles of a bottlebrush
buckeye sticking out of the snow is appreciated.

So what about it?  Who has favorites that have interesting bark highlighted
by the cold winter months?  What about persistent fruit or winter flowers?
